Leeks

The leek is a member of the onion family, but is milder than either onions or garlic.  It has a thick, whitle stalk that is cylindrical in shape and has a slightly bulbous root end.  Leeks develop broad, flat, dark leaves that are wrapped tightly around each other like rolled newspaper.  Before using, trim rootlets and leaf ends and wash thoroughly to remove all the dirt trapped between the layers.
